Concocted by our Chef, Christophe Vauthier, and advised by dietitians, the menus proposed by the restaurants adhere to the three themes of New, Nutritive and Natural that focus on healthy seasoning, low-temperature cooking methods. Delicious and fresh, our menus "Flavours, Pleasure and Health" (calorie-controlled), "Back from the Marketplace", and "Business Menu" offer a multitude of flavours. For starters, our Chef suggests a poached egg with girolles mushrooms, Auvergne chicken with foie gras Poule au Pot style, Saint Jacques raviolis cooked in agrey shrimp bouillon... And for the dessert, a millefeuille with vanilla cream, salted butter caramel and candied apricots. A delight. Accompanied of course by a bottle of Vichy Célestins, without forgetting the selection of wines proposed on our wine list.
In a bistro-ambience, comfortably seated on leather benches, around the counter, delight in French gastronomy and regional products. Local specialities are reinterpreted with this same attention to dietary balance for certain dishes. As a starter, the chef proposes his velouté of marrow with fourme d'Ambert cheese, followed by lean roast meat with granailles apples, ceps and chestnuts... before ending with original and flavorsome pastries concocted by our pastry chef, such as his soft chocolate cake and crêpe Suzette.
Comfortably seated in its cosy atmosphere, near the fireplace or on the flowery terrace, taste our house cocktails: le Célest Mojito, made of powdered Vichy Lozenges and Vichy Célestins water and our Wellness cocktails based on fresh vegetables and fruit... without forgetting our wine and spirits list, with its impressive range of champagnes, British, Canadian, American whiskies, and many other aperitifs and digestifs, to be consumed with moderation. From evening aperitif time through to midnight, the Blue Note serves chic and light tapas. Our cigar selection and smoking room will delight lovers of Cuban specialities.
