Healthy cooking with the Risotto recipe using Vichy Célestins mineral water!
Traditionally originating in Italy, risotto is a dish which we revisit, using Vichy Célestins mineral water. A light meal with 253kcl per person, we are sure it will please you!

Risotto

For 2 people 253kcal per person.

IngrEdients

  • Chicken stock made with Vichy Célestins mineral water
  • 30g of uncooked risotto rice
  • 100g large prawns, peeled
  • 20g shallots
  • 120g mushrooms
  • 10g celeriac
  • 10ml fat free cream or fat free milk
  • 20ml white wine
  • parsley, chervil

INSTRUCTIONS

Wash and slice the mushrooms and celery, then heat and soften in a dry pan. Add stock as required and cook to your desired consistency. Slice the shallots then heat and soften in a second dry pan. Add the rice and cook over a low heat for 1 min, until the rice becomes transparent. Add the white wine and let evaporate. Add the fat-free cream to the rice and stir. Check the seasoning. Add the stock and stir with a wooden spatula until the cooking liquid has evaporated. Add the pre-cooked vegetables. Lightly salt the prawns, and cook in a pan. Present the risotto in a dish topped with the prawns. Add the chopped parsley and chervil.
Add parmesan to the risotto, but consider it as the portion of cheese of the meal.

You want to enhance the flavour of your dish and reduce the amount of salt it needs?

No problem! The Vichy mineral salts, sold in the boutique of the Vichy Célestins Thermal Spa*, are a mix of mineral salts extracted from Vichy thermal spring waters and cooking salt/table salt (NAcl / sodium chloride). It helps to reduce up to 40% of the quantity of salt used in cooking without changing your perception of its saltiness (study by Vetagro-Sup 2014) and at the same time provides a supplement of mineral salts !

* Vichy mineral salts are on sale at the boutique of the Vichy Célestins Thermal Spa, 111 Boulevard des Etats-Unis - 03200 VICHY, France.

-_- WHY COOK WITH VICHY CÉLESTINS MINERAL WATER?

Cuisinez santé avec l'eau Vichy Célestins !With more than 3,000mg of minerals per litre, Vichy Célestins mineral water is one of the traditional French mineral waters which is naturally sparkling, contains bicarbonate of soda, and is rich in minerals.
VICHY Célestins mineral water is rich in sodium bicarbonate with 2,989 mg/l. It also contains sodium (1,172mg/litre), calcium (103mg/litre), magnesium (10mg/litre), potassium (66mg/litre), chloride (235mg/litre), sulphates (13mg/litre), silicon (40mg/litre) and lithium (3.22mg/litre).

For this recipe we made a "détente": "détendre" is a French culinary term, which means making a preparation, a mixture, a sauce... more fluid, by adding a liquid. Being rich in sodium bicarbonate, the mineral water helps to neutralise the acidity of certain foodstuffs. It also help improve digestion.

So, using Vichy Célestins mineral water is ideal for cooking vegetables as they will become saturated with the minerals it contains during cooking. Furthermore, the brightness of their colour will be preserved when cooking in water using Vichy Célestins mineral water.

We hope you enjoy your meal... bon appétit!
